Season both sides of the pork chops with salt and pepper.

Glaze the Pork Chops
During the last 2 minutes of grilling, brush the apricot ginger glaze onto the pork chops and allow it to caramelize slightly.
Preparing the Asparagus

Prepare the Asparagus
Toss the asparagus spears with olive oil, salt, and pepper.

Roast the Asparagus
Place the asparagus on a baking sheet and roast in the oven at 400°F for about 10-15 minutes until tender.
Making the Roasted Garlic Mashed Potatoes

Add roasted garlic, butter, milk, and salt to the drained potatoes. Mash until smooth.
Preparing the Apricot Chutney

In a saucepan, combine diced apricots, onion, brown sugar, cider vinegar, and minced ginger. Simmer over medium heat for about 15 minutes until thickened.
