    Prepare the Roasted Corn Sauce

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the garlic cloves and sauté until fragrant. Add the corn kernels and cook until tender, about 5-7 minutes. Stir in the heavy cream, salt, and pepper. Simmer for another 5 minutes, then blend until smooth. Keep warm.

    Cook the Salmon

    Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown, then transfer to the oven to cook for an additional 8-10 minutes.

    Make the Balsamic Red Onion Marmalade

    Slice the red onion thinly. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the onion and balsamic vinegar. Cook until caramelized, about 15-20 minutes. Stir occasionally and adjust seasoning with salt if necessary.

    Prepare the Garlic Mashed Potatoes

    Peel and chop the potatoes, then boil in salted water until tender, about 20 minutes. Drain and return to the pot. Add butter, roasted garlic (from above), salt, and mash until creamy. Stir in chopped parsley.

    Fry the Shoestring Potatoes

    Using a mandoline or knife, cut the potatoes into thin strips. Heat vegetable oil in a deep fryer or large pot. Fry the potato strips until golden and crispy. Drain on paper towels and season with salt.

    Serve the Dish

    On each plate, place a generous scoop of garlic mashed potatoes, top with the salmon fillet, drizzle with roasted corn sauce, and add a spoonful of balsamic red onion marmalade. Garnish with crispy shoestring potatoes.
