    Prepare the Bread

    Preheat your brick oven to a high temperature (around 450°F or 232°C). Brush one side of each slice of ciabatta bread with olive oil.

    Assemble the Panino

    On the non-oiled side of one slice of bread, layer the house cured tomatoes, fresh mozzarella, provolone cheese, and fresh basil leaves. Spread the tomato almond pesto evenly on the other slice of bread, and place it on top to form a sandwich.

    Grill the Panino

    Carefully place the assembled panino in the preheated brick oven. Grill for about 5-7 minutes, or until the bread is golden brown and the cheeses have melted.

    Serve

    Remove the panino from the oven, let it cool for a minute, then slice in half. Season with salt and black pepper to taste before serving.
