    Prepare the Vegetables

    Preheat your grill or oven to medium-high heat. Cut the rustic vegetables into bite-sized pieces and toss them with olive oil, salt, pepper, and fresh herbs.

    Place the seasoned vegetables in a grill basket or on a baking sheet and roast for about 15-20 minutes, stirring occasionally, until they are tender and slightly charred.

    Prepare the Potatoes

    While the vegetables are roasting, wash the fingerling potatoes and cut them in half. Toss with olive oil, salt, and pepper. Roast them on a separate baking sheet for about 20-25 minutes or until golden and crispy.
