    Prepare the Pork

    Season the pork shoulder with salt and black pepper. Rub with olive oil and let it marinate for at least 1 hour or overnight in the refrigerator for best results.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and smoke for about 6-8 hours or until the internal temperature reaches 195°F (90°C).

    Grill the Vegetables

    While the pork is smoking, slice the red onion, red bell pepper, and jalapeño. Toss them in olive oil and grill on medium heat until tender, about 5-7 minutes. Add the pineapple rings to the grill and cook for an additional 3-5 minutes until caramelized.

    Assemble the Dish

    Once the pork is done, shred it and mix with sweet Thai chile sauce. Layer the smoked pork on a serving platter, top with grilled pineapple, sautéed vegetables, and sprinkle with mozzarella and provolone cheese.

    Finish with fresh cilantro on top. Serve warm and enjoy!
