Prepare the Brussels Sprouts
Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Slice the Brussels sprouts in half.

Season the Brussels Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the edges, stirring halfway through.

Prepare the Romesco Cream
While the Brussels sprouts are roasting, prepare the Romesco cream if not using store-bought. Blend roasted red peppers, almonds, garlic, olive oil, vinegar, and salt until smooth. Adjust seasoning to taste.

Once the Brussels sprouts are done, remove them from the oven and let them cool slightly. Drizzle with Romesco cream, sprinkle with fresh herbs and toasted almonds before serving.
