    Prepare the Prime Rib

    Season the prime rib roast with salt, black pepper, and thyme. Sear the roast in a hot skillet with olive oil until browned on all sides. Transfer to a preheated oven at 375°F (190°C) and roast until the desired doneness is reached (about 1.5 to 2 hours for medium-rare). Let it rest for 15 minutes before slicing.

    Roast the Bell Peppers and Caramelize the Onions

    While the prime rib is roasting, cut the bell peppers into strips and slice the onion. In a skillet, heat olive oil over medium heat. Add the onions and cook until they are soft and caramelized, about 15-20 minutes. Add the bell peppers and cook until they are tender, about 10 minutes. Season with salt and pepper to taste.

    Assemble the Sandwiches

    Slice the ciabatta rolls in half. Layer the sliced prime rib, caramelized onions, roasted bell peppers, and smoked Gouda cheese on the bottom half of each roll. Top with the other half of the roll.

    Place the assembled sandwiches on a baking sheet. Broil in the oven for 3-5 minutes or until the cheese is melted and bubbly.

    Serve with Au Jus

    Heat the beef broth or au jus in a saucepan. Serve the sandwiches with a side of au jus for dipping.
