    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Toss the Brussels sprouts, fingerling potatoes, red bell pepper, and sliced onions with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20-25 minutes until tender and caramelized.

    Cook the Bacon

    In a skillet over medium heat, cook the diced applewood smoked bacon until crispy. Remove from the skillet and set aside, leaving the rendered fat in the pan.

    Prepare the Cod

    Season the Icelandic cod fillets with salt and pepper. In the same skillet with the bacon fat, add the cod skin-side down and cook for 4-5 minutes until golden brown. Flip the fillets, then cover with the almond herb mixture (almonds, parsley, dill) and cook for another 4-5 minutes until the fish is cooked through.

Plating

    Assemble the Dish

    On each plate, place a portion of the roasted vegetables, top with a cod fillet, and drizzle with romesco sauce. Garnish with crispy bacon pieces.
