Preheat the oven to 400°F (200°C). Wrap the golden beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and dice.

In a bowl, mix goat cheese with salt, pepper, and lemon zest. Form into small balls (about 1 inch in diameter).

Coat the Goat Cheese Balls
Set up a breading station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Dredge each cheese ball in flour, dip in eggs, and coat with breadcrumbs.

In a large skillet, heat olive oil over medium heat. Fry the cheese balls until golden brown on all sides, about 2-3 minutes. Remove and drain on paper towels.
