Jam Preparation

Prepare the Ingredients
In a large pot, melt the unsalted butter over medium heat until it begins to brown, stirring frequently to prevent burning.

Combine Ingredients
Add the fresh cherries, brown sugar, bourbon, and lemon juice to the pot. Stir well to combine all the ingredients.

Cook the Mixture
Bring the mixture to a boil over medium-high heat. Reduce heat and let it simmer for about 15-20 minutes, stirring occasionally until the cherries are softened.

Add Pectin
Stir in the pectin and continue to simmer for another 5-10 minutes, until the mixture thickens to your desired consistency.

Jar the Jam
Pour the hot jam into sterilized jars, leaving about 1/4 inch headspace at the top. Seal the jars with lids.

Cool and Store
Let the jars cool at room temperature, then store them in the refrigerator for up to 3 weeks or process in a water bath for long-term storage.
