Buffalo Walleye Fingers

    Prepare the Walleye

    Cut the walleye fillets into finger-sized strips and season with salt and black pepper.

    Set up Breading Station

    In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, mix cornstarch with a pinch of salt and pepper.

    Bread the Fish

    Dredge each fish strip in flour, dip into the egg, then coat with the cornstarch mixture.

    Fry the Walleye

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the breaded fish strips in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.

    Toss in Buffalo Sauce

    Once fried, toss the walleye fingers in buffalo sauce until well coated.

    Serve with Tartar Sauce

    Serve immediately with smoked pepper tartar sauce on the side.
