Main Ingredients

Seasonal Vegetables

Method

Preparing the Marinade

  1. 1

    Make the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, and chopped fresh dill. Whisk together until well blended.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well coated. Cover and refrigerate for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

Wash and trim the asparagus. Cut the bell pepper and zucchini into bite-sized pieces. Halve the cherry tomatoes.

  2. 4

    Season the Vegetables

In a bowl, combine the prepared vegetables with salt and black pepper. Toss to ensure the vegetables are evenly coated.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Salmon

Remove the salmon fillets from the marinade and place them on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables in a grill basket or on skewers. Grill for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are done, remove them from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables.

  2. 9

    Garnish (Optional)

You can garnish the dish with additional fresh dill or lemon wedges if desired.
