Directions

  1. 1

    Prepare Pasta

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Mix Cheese Filling

In a large bowl, combine the ricotta cheese, salt, black pepper, and Italian seasoning. Mix well.

  3. 3

    Prepare Meatballs and Eggs

Slice the cooked meatballs and hard boiled eggs.

  4. 4

    Assemble the Dish

In a large baking pan (20"x12"x4"), spread a layer of red sauce on the bottom. Add half of the cooked penne pasta, followed by half of the ricotta mixture, half of the sliced meatballs, and half of the sliced hard boiled eggs. Repeat layers with the remaining ingredients.

  5. 5

    Add Mozzarella

Top the final layer with the remaining red sauce and sprinkle the mozzarella cheese evenly on top.

  6. 6

    Bake

Preheat the oven to 350°F (175°C). Drizzle olive oil over the top and cover the pan with aluminum foil. Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden.

  7. 7

    Serve

Remove from the oven and let cool for a few minutes before slicing and serving.
