Preparation Steps

    Preheat Oven

    Preheat your oven to 180°C (350°F).

    Cook the Meat

    In a large skillet over medium heat, add the ground beef, veal, and pork. Season with allspice, salt, and pepper. Cook until browned and fully cooked, about 10-15 minutes. Drain excess fat and set aside.

    Prepare the Pasta

    Cook the tube pasta according to package instructions until al dente. Drain and set aside.

    Mix the Cheese Filling

    In a large bowl, combine the cooked pasta, eggs, kasseri cheese, parmesan cheese, and feta cheese. Mix well until all ingredients are combined.

    Make the Béchamel Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the milk, whisking constantly until the sauce thickens. Season with nutmeg, salt, and pepper. Remove from heat.

    Assemble the Pastachio

    In a greased half pan (10"x12"x2.5"), layer half of the filo pastry sheets at the bottom. Add the meat mixture, followed by the cheese-pasta mixture. Pour the béchamel sauce on top and sprinkle with additional parmesan cheese.

    Bake

    Cover the pan with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

    Let the Pastachio cool for a few minutes before slicing and serving. Enjoy!
