Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. In a large bowl, combine salt, pepper, garlic powder, and paprika. Toss the wings in the spice mixture until evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C). You can test the oil by dropping in a small piece of bread; if it sizzles and browns quickly, the oil is ready.

Fry the Wings
Carefully add the wings to the hot oil in batches. Fry for 8-10 minutes or until they are golden brown and cooked through. Use a slotted spoon to transfer the wings to a paper towel-lined plate to drain excess oil.

Toss in Sauce
In a large bowl, take the fried wings and add your choice of sauce. Toss until the wings are well coated.

Serve the wings hot with celery sticks and blue cheese or ranch dressing on the side.
