Cooking Instructions
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness.
- 2
Bread the Chicken
Set up a breading station: place flour in one shallow dish, beaten eggs in another, and bread crumbs in a third. Season the flour with salt and pepper. Dredge each chicken breast in flour, dip in eggs, and coat with bread crumbs.
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken breasts for 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.
- 4
Assemble the Dish
In a baking dish, spread a thin layer of marinara sauce. Place the fried chicken on top, then cover each piece with remaining marinara sauce. Sprinkle mozzarella and provolone cheese on top of the chicken.
- 5
Bake the Chicken
Transfer the baking dish to the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.
- 6
Serve
Remove from the oven and sprinkle with grated Parmesan cheese. Serve hot with pasta or a side salad.
