    Prepare the Lamb

    Preheat your oven to 200°C (400°F). Season the lamb rack with salt, black pepper, and half of the olive oil. Rub the garlic and fresh rosemary onto the meat.

    Roast the Lamb

    Place the lamb rack in a roasting pan and roast in the oven for 25-30 minutes for medium-rare, or until the desired doneness is reached. Remove from the oven and let rest for 10 minutes before slicing.

    Prepare the Potatoes

    While the lamb is roasting, wash and quarter the potatoes. In a pan, heat the remaining olive oil over medium heat, add the potatoes, and season with salt and pepper. Cook for about 20-25 minutes until golden brown and crispy.

    Sauté the Brussels Sprouts

    Shave the Brussels sprouts thinly. In another pan, add a bit of olive oil and sauté the shaved Brussels sprouts for about 5-7 minutes until tender. Season with salt and pepper.

    Make the Blackberry Demi

    In a small saucepan, combine the blackberries, red wine, and beef stock. Bring to a simmer and reduce until thickened, about 10-15 minutes. Strain if desired.

    Serve

    On a plate, arrange the sliced lamb, roasted potatoes, and sautéed Brussels sprouts. Drizzle with blackberry demi and serve immediately.
