Bourbon Glazed Pork Belly

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season generously with salt and black pepper.

    Create the Glaze

    In a medium saucepan, combine brown sugar, bourbon, soy sauce, minced garlic, and grated ginger. Bring to a simmer over medium heat and cook until the sugar dissolves and the mixture thickens slightly, about 10 minutes.

    Roast the Pork Belly

    Place the pork belly in a roasting pan and brush generously with the bourbon glaze. Cover with foil and roast in the preheated oven for 2 to 2.5 hours, until tender.

    Glaze and Crisp

    Remove the foil, brush with more glaze, and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes, basting occasionally, until the skin is crispy and caramelized.

    Rest and Slice

    Remove from the oven and let the pork belly rest for 15 minutes before slicing into portions.
