Crab Cake Preparation

    Prepare the Crab Mixture

    In a large mixing bowl, combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, and bread crumbs. Gently fold the ingredients together to avoid breaking up the crab meat.

    Add Egg and Seasoning

    Add the egg to the crab mixture and season with salt and black pepper to taste. Mix gently until everything is just combined.

    Form the Cakes

    Divide the mixture into equal portions and form them into patties, about 1 inch thick. Place the formed crab cakes on a parchment-lined baking sheet.

    Chill the Cakes

    Refrigerate the crab cakes for at least 30 minutes to help them hold their shape during cooking.

    Cook the Crab Cakes

    Heat a non-stick skillet over medium heat and add a little oil. Cook the crab cakes for about 4-5 minutes on each side or until golden brown and heated through.

    Prepare the Remoulade

    Serve the crab cakes with a side of remoulade sauce and garnish with micro arugula.
