Fried Green Tomatoes and Burrata

Method

Making the Fried Green Tomato Burrata Stack

    Prepare the Green Tomatoes

    Slice the green tomatoes into 1/2 inch thick rounds. Season with salt and black pepper, then set aside.

    Setup Breading Station

    In three separate bowls, place the flour in one, beaten eggs in the second, and a mixture of cornmeal, salt, and pepper in the third.

    Bread the Tomatoes

    Dredge each tomato slice in flour, shaking off excess, then dip in the eggs, and finally coat with the cornmeal mixture. Set aside on a plate.

    Fry the Tomatoes

    In a large skillet, heat vegetable oil over medium-high heat. Fry the coated tomato slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Assemble the Stack

    On a serving plate, stack a fried green tomato, a piece of burrata, and then repeat until all ingredients are used. Drizzle with lemon-pesto, red pepper relish, and balsamic-fig reduction before serving.
