Make the Chocolate Cremeux
In a saucepan, heat the heavy cream until just boiling. Remove from heat and add the chopped milk chocolate and unsalted butter. Stir until smooth and fully combined. Pour into a mold and let it set in the refrigerator for at least 2 hours.

Prepare the Crispy Peanut Rocher
In a bowl, mix the crushed peanuts and rice crispies together. Melt the remaining chocolate, drizzle it over the mixture, and stir until well combined. Spread this mixture onto a baking sheet lined with parchment paper and let it cool and harden.

Assemble the Dish
Once the chocolate cremeux has set, cut it into desired shapes. Place a piece of the crispy peanut rocher on top of each piece of cremeux. Drizzle the caramel sauce over the top and serve.
