Make the Crepe Batter
In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and melt a little butter. Pour a small amount of batter into the skillet, swirling to coat the bottom. Cook for about 1-2 minutes until the edges lift. Flip and cook for another minute. Repeat until all batter is used.

Prepare the Filling
In a large skillet, melt the remaining butter over medium heat. Add the sliced mushrooms and sauté until they are tender and browned, about 5-7 minutes. Add the chopped spinach and cook until wilted. Remove from heat and stir in the feta cheese.

Assemble the Crepes
Place a crepe on a plate, add a generous amount of mushroom and spinach filling, and fold the crepe over. Top with pickled onions.
