    Prepare the Broth

    In a saucepan, bring the chicken or vegetable broth to a gentle simmer. Keep it warm on low heat.

    Sauté the Aromatics

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.

    Toast the Rice

    Add the Arborio rice to the skillet and stir to coat the grains with the oil and butter. Toast the rice for about 2-3 minutes until slightly translucent.

    Deglaze with Wine

    Pour in the dry white wine and stir until it is mostly absorbed by the rice.

    Cook the Risotto

    Add a ladle of warm broth to the rice, stirring frequently, until the liquid is absorbed. Continue adding broth, one ladle at a time, stirring constantly, until the rice is creamy and al dente, about 18-20 minutes.

    Add Shrimp and Finish

    When the risotto is almost done, stir in the shrimp, remaining butter, salt, and pepper. Cook for an additional 3-5 minutes until the shrimp are pink and cooked through. Remove from heat and stir in the grated Parmesan cheese.

    Garnish with chopped fresh parsley and serve immediately.
