    Prepare the Potatoes

    Place the small potatoes in a pot of cold salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

    Blanch the Green Beans

    In a separate pot, bring water to a boil. Add the green beans and cook for about 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process.

    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and sear for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through.

    Assemble the Salad

    On a large platter, arrange the cooked potatoes, green beans, halved cherry tomatoes, sliced hard-boiled eggs, and black olives. Place the seared salmon on top.

    Garnish and Serve

    Drizzle with extra olive oil, sprinkle with fresh parsley, and serve with lemon wedges on the side.
