Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and pepper. Place it in a roasting pan and drizzle with olive oil. Cover the pan with foil and roast for about 2.5 to 3 hours, or until the pork is tender.

Sear the Pork Belly
Once cooked, remove the pork belly from the oven and let it rest for 15 minutes. Heat a skillet over medium-high heat and sear the pork belly on all sides until crispy. Let it rest for a few more minutes before slicing into small pieces.

Prepare the Sliders
Slice the brioche buns in half. Spread a generous amount of sambal aioli on the bottom half of each bun. Add a layer of arugula, followed by the crispy pork belly pieces, and top with pickled carrots.

Assemble and Serve
Place the top half of the bun on each slider and serve immediately. Enjoy your delicious pork belly sliders!
