    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10 minutes. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add the red onion and red bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Add the boiled potatoes to the skillet, mixing well with the onion and bell pepper. Cook for about 5-7 minutes, allowing the potatoes to get slightly crispy.
