    Preparing the Potatoes

    Wash and peel the russet potatoes. Using a mandoline or sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Soaking the Potatoes

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Frying the Chips

    In a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to remove the chips and drain on paper towels.

    Seasoning the Chips

    While the chips are still warm, sprinkle with sea salt and the house seasoning (garlic powder, onion powder, paprika, and black pepper) to taste. Toss to coat evenly.

    Serving

    Serve the potato chips warm with french onion dip.
