    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for another minute. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and pepper to the pot. Bring to a simmer and let it cook for 20-30 minutes to allow the flavors to meld.

    Prepare the Topping

    While the soup is simmering, preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven until golden brown.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle with grated Gruyère cheese.

    Place the bowls under the broiler for 2-3 minutes until the cheese is melted and bubbly. Watch closely to prevent burning.
