Method

Preparation and Cooking

  1. 1

    Prepare the Ham

Preheat your smoker to 225°F (107°C). Score the surface of the whole ham in a diamond pattern, making shallow cuts.

  2. 2

    Make the Glaze

In a medium bowl, mix together brown sugar, honey, Dijon mustard, black pepper, cinnamon, and cloves until combined.

  3. 3

    Apply the Glaze

Generously apply the glaze all over the scored ham, ensuring it gets into the cuts for maximum flavor.

  4. 4

    Prepare the Smoker

Soak the applewood chips in water for at least 30 minutes. Drain and add to the smoker box or directly on the coals.

  5. 5

    Smoke the Ham

Place the ham in the smoker and smoke for about 4-6 hours, or until the internal temperature reaches 145°F (63°C).

  6. 6

    Rest and Serve

Remove the ham from the smoker and let it rest for at least 20 minutes before slicing and serving.
