Prepare the Beets
Preheat the oven to 425°F (220°C). Peel the beets and cut them into fry-shaped sticks.

Season the Beets
In a large bowl, toss the beet sticks with olive oil, togarashi seasoning, and salt until well coated.

Bake the Fries
Spread the seasoned beet fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until the fries are crispy and tender.

Prepare the Dipping Sauces
While the fries are baking, prepare the dipping sauces. In a small bowl, mix Kewpie mayonnaise with a bit of togarashi seasoning for extra flavor. Set aside.

Serve
Once the beet fries are done, remove them from the oven and let them cool slightly. Drizzle with cilantro oil and serve alongside Kewpie mayo and chili apricot sauce for dipping.
