    Prepare the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the rice and cook for another 2 minutes. Add parsley, dill, mint, salt, and black pepper, and mix well. Pour in 1 cup of water, cover, and simmer on low heat until the rice is partially cooked (about 10 minutes). Remove from heat and let cool.

    Stuff the Vine Leaves

    If using fresh vine leaves, blanch them in boiling water for 2-3 minutes until soft. Lay a vine leaf flat, place a tablespoon of the filling at the base, fold in the sides, and roll tightly. Repeat with remaining leaves and filling.

    Cook the Stuffed Leaves

    In a large pot, arrange the stuffed vine leaves seam-side down. Drizzle the remaining olive oil and lemon juice over them. Pour in 1 cup of water, cover, and simmer on low heat for about 30-40 minutes until the leaves are tender and the rice is fully cooked.

    Let cool slightly before serving. Serve warm or at room temperature with a side of yogurt or lemon wedges.
