1. Make the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In a large bowl, mix flour and salt, then create a well in the center. Add the yeast mixture and olive oil, and knead until smooth. Cover and let rise for 1 hour.
2. Prepare the Filling
In a bowl, crumble the feta cheese and mix it with grated mozzarella, black pepper, and dried oregano until well combined.
3. Shape the Pide
Preheat the oven to 220°C (425°F). Once the dough has risen, punch it down and divide into 4 equal pieces. Roll each piece into an oval shape. Place the filling in the center and fold the edges to create a boat shape.
4. Bake the Pide
Transfer the pide to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
5. Serve
Remove from the oven and let cool slightly. Slice and serve warm.
