1. Make the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
2. Prepare the Filling
Once the dough has risen, preheat your oven to 220°C (425°F). In a skillet, lightly sauté the red bell pepper until softened. Set aside.
3. Assemble the Pide
Punch down the dough and divide it into 4 equal portions. Roll each portion into an oval shape on a floured surface. Place the rolled dough onto a baking sheet lined with parchment paper. Spread a layer of mozzarella cheese down the center of each dough, followed by slices of sucuk and sautéed bell pepper. Sprinkle with black pepper.
4. Bake the Pide
Fold the edges of the dough over the filling, pinching to seal slightly. Bake in the preheated oven for about 15-20 minutes or until the edges are golden and the cheese is bubbling.
5. Serve
Remove from the oven and let cool for a few minutes. Slice and serve warm.
