    Make the Dough

    In a bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center, and pour in the yeast mixture and olive oil. Mix until a dough forms.

    Knead and Rise

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent. Add the diced potato and cook until tender. Stir in the spinach and cook until wilted. Remove from heat and add feta and mozzarella. Season with salt and black pepper to taste.

    Shape the Pide

    Once the dough has risen, punch it down and divide it into 2 equal parts. Roll each part into an oval shape. Place the filling in the center and fold the edges over to create a boat shape.

    Bake

    Preheat the oven to 400°F (200°C). Place the shaped pide on a baking sheet. Bake for 15-20 minutes or until the dough is golden brown.

    Serve

    Remove from the oven and let it cool slightly before slicing. Serve warm.
