    Prepare the Filling

    Peel and dice the potatoes into small cubes. In a large mixing bowl, combine the diced potatoes, chopped onion, olive oil, paprika, salt, black pepper, and cumin. Mix well to ensure all ingredients are evenly coated.

    Prepare the Dough

    In a separate bowl, mix 3 cups of flour, 1 teaspoon of salt, and enough warm water to form a soft dough. Knead the dough for about 5-10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Assemble the Pide

    Divide the dough into equal portions and roll each out into an oval shape. Place a generous amount of the potato filling along the center of each oval, then fold the edges over to create boats. Pinch the ends to seal.

    Bake the Pide

    Preheat the oven to 400°F (200°C). Place the assembled pide on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the dough is golden brown and the filling is cooked through.

    Remove from the oven and let cool slightly before slicing. Serve warm with a drizzle of olive oil on top, if desired.
