Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pide
Preheat your oven to 475°F (245°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into an oval shape. Place on a baking sheet lined with parchment paper. Spoon the lamb mixture onto the center of each oval, leaving a border around the edges.

Bake the Pide
Fold the edges of the dough over the filling, pinching to create a boat shape. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.

Remove from the oven, garnish with chopped parsley, and serve hot.
