1. Prepare the Dough

In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

2. Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

3. Prepare the Filling

In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, sauté until soft. Add the minced lamb and cook until browned. Stir in tomatoes, red bell pepper, cumin, paprika, salt, and pepper. Cook for another 5 minutes, then remove from heat.

4. Shape the Pide

Preheat your oven to 475°F (245°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into an oval shape. Place on a baking sheet lined with parchment paper. Spoon the lamb mixture onto the center of each oval, leaving a border around the edges.

5. Bake the Pide

Fold the edges of the dough over the filling, pinching to create a boat shape. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.

6. Serve

Remove from the oven, garnish with chopped parsley, and serve hot.
