Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy. Add flour, salt, and olive oil. Knead until smooth and elastic. Cover and let rise for 1 hour.

Prepare the Filling
In a skillet, sauté onion and garlic until translucent. Add ground beef and cook until browned. Stir in tomato paste, paprika, salt, and pepper. Remove from heat and mix in feta cheese, mozzarella, and parsley.

Shape the Pides
Preheat the oven to 475°F (245°C). Punch down the dough and divide into equal portions. Roll each portion into an oval shape, leaving the edges thicker. Fill the center with the beef mixture and fold up the edges to create a boat shape.

Bake
Place the pides on a baking sheet and bake for 15-20 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
