Pide Preparation

    Make the Dough

    In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until it forms a dough. Knead on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let it rise for 1 hour.

    Prepare the Filling

    In a pan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent. Add ground beef, cook until browned. Stir in chopped spinach, tomato paste, paprika, black pepper, and salt. Cook for another 5 minutes until the spinach wilts. Remove from heat and let cool slightly.

    Shape the Pide

    Preheat the oven to 220°C (428°F). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into an oval shape, about 1/4 inch thick. Place on a baking sheet lined with parchment paper.

    Fill and Bake

    Spoon the filling along the center of each oval dough, leaving the edges clear. Fold the sides over to create a boat shape. Bake in the preheated oven for 15-20 minutes until the edges are golden brown. Serve warm.
