Prepare the Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let it rise for 1 hour.

Prepare the Chicken Filling
In a skillet over medium heat, add a little olive oil. Sauté onion, garlic, and bell pepper until softened. Add ground chicken, cumin, paprika, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes. Stir in chopped parsley and remove from heat.

Shape the Pide
Preheat the oven to 475°F (245°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into an oval shape. Place the chicken filling along the center of each oval, leaving edges clear. Fold the edges over the filling and pinch to seal.

Bake the Pide
Place the shaped pide on a baking tray lined with parchment paper. Beat the egg and brush it over the tops of the pide. Bake in the preheated oven for about 15-20 minutes until golden brown.

Serve
Remove from the oven and let cool slightly. Slice and serve warm, garnished with extra parsley if desired.
