    Prepare the nut filling

    In a food processor, pulse the walnuts and almonds until finely chopped. Mix in the ground cinnamon and set aside.

    Prepare the baklava

    Preheat the oven to 350°F (175°C). Melt the unsalted butter. Lay one sheet of filo pastry in a greased 9x13 inch baking dish and brush with melted butter. Repeat this process, layering 8 sheets of filo, brushing each with butter.

    Add the nut mixture

    Spread a layer of the nut mixture over the buttered filo. Add 3 more buttered filo sheets on top. Repeat the nut filling and filo layering until all the nuts are used, finishing with at least 8 layers of buttered filo on top.

    Cut the baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut through all layers.

    Bake the baklava

    Bake in the preheated oven for about 45 minutes or until golden brown and crisp.

    Prepare the syrup

    While the baklava is baking, combine the sugar, water, and honey in a saucepan. Bring to a boil, then reduce to a simmer for about 10 minutes.

    Combine and serve

    Once the baklava is done baking, pour the hot syrup over it immediately. Allow it to cool completely before serving.
