Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Topping Preparation

    Prepare Roasted Garlic

    If not already done, roast the garlic by cutting the top off a head of garlic, drizzling it with olive oil, wrapping it in foil, and baking at 400°F (200°C) for 30-35 minutes until soft. Let cool and squeeze out the cloves.

    Mix Cheeses

    In a bowl, combine ricotta, roasted garlic, and half of the mozzarella. Season with salt and black pepper to taste.

Pizza Assembly and Baking

    Preheat Oven

    Preheat your oven to 475°F (245°C) while the dough is rising.

    Shape Dough

    Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

    Assemble Pizza

    Transfer the rolled dough to a pizza stone or baking sheet. Spread the ricotta mixture evenly over the dough, leaving a small border for the crust. Sprinkle the remaining mozzarella and crumbled goat cheese over the top.

    Bake Pizza

    Drizzle olive oil over the top of the pizza and bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.

    Garnish and Serve

    Remove the pizza from the oven, sprinkle with fresh basil, and let it cool for a few minutes before slicing. Serve warm.
