Preparing the Filling

1. Prepare the Spinach

Wash and chop the spinach finely. Sauté it in a pan over medium heat for about 3 minutes until wilted. Set aside to cool.

2. Mix the Filling

In a bowl, combine the ricotta cheese, sautéed spinach, grated parmesan cheese, egg, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Making the Pasta

3. Prepare the Dough

If using store-bought pasta dough, roll it out thinly. If making from scratch, combine flour and eggs until a dough forms. Knead until smooth and roll out into thin sheets.

4. Form the Pasticcare

Cut pasta sheets into squares (about 5x5 cm). Place a small spoonful of filling in the center of each square. Fold the pasta over to form a triangle and seal the edges with a fork.

Cooking the Sauce

5. Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in crushed tomatoes, salt, and black pepper. Simmer for 10 minutes.

6. Add Basil

Tear the basil leaves and add to the sauce. Stir well and let it cook for another 2 minutes.

Cooking the Pasticcare

7. Boil the Pasticcare

Bring a large pot of salted water to a boil. Gently add the pasticcare and cook for 3-4 minutes or until they float to the surface.

8. Serve

Drain the pasticcare and serve hot with the basil tomato sauce on top. Garnish with additional grated parmesan if desired.
