Preparation

1. Harvesting Grapes

Select ripe grapes from the Arroyo Grande Valley. Ensure they are free from rot and have a good balance of sugar and acidity.

2. Washing Grapes

Rinse the selected grapes thoroughly under running water to remove any dirt or pesticides.

Fermentation

3. Crushing Grapes

Crush the washed grapes in a fermentation vessel to release the juice. You can use a wine press or do it manually.

4. Mixing Ingredients

Add sugar, water, and citric acid to the crushed grapes. Stir well to dissolve the sugar.

5. Adding Yeast

Sprinkle the yeast evenly over the mixture and stir gently to incorporate it. Seal the fermentation vessel.

6. Fermentation Process

Allow the mixture to ferment in a cool, dark place for about 1-2 weeks. Check the specific gravity with a hydrometer to monitor fermentation.

Bottling

7. Siphoning Wine

Once fermentation is complete, use a siphoning tube to transfer the wine into clean bottles, leaving some space at the top.

8. Corking Bottles

Seal the bottles with corks and store them upright in a cool, dark place for aging.
