Honey Sage Simple Syrup

Prepare the Simple Syrup
In a small saucepan, combine the honey and water. Heat over medium heat while stirring until the honey is fully dissolved.

Cool and Strain
Remove from heat, allow the syrup to cool, and then strain out the sage leaves. Set aside.
Assemble the Drink

Mix the Ingredients
In a cocktail shaker, combine the white wine, pear purée, elderflower liqueur, lemon juice, and 20 ml of the honey sage simple syrup. Fill the shaker with ice.

Shake Well
Shake the mixture vigorously for about 15-20 seconds until well chilled.

Strain and Serve
Strain the mixture into a glass filled with ice. Top with soda water and gently stir to combine.

Garnish
Garnish with a fresh sage leaf or a slice of pear if desired.
