Short Rib Preparation

Season the Ribs
Pat the bone-in short ribs dry with paper towels. Season generously with salt and black pepper on all sides.

Sear the Ribs
In a large, heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs from the pot and set aside.

Add Liquid and Herbs
Return the short ribs to the pot. Add beef broth, thyme sprigs, and bay leaves. Ensure the ribs are mostly submerged in liquid.

Braise the Ribs
Bring the liquid to a gentle simmer. Cover the pot and transfer it to a preheated oven at 325°F (165°C). Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
Caramelized Onion and Roasted Garlic

Prepare the Garlic
Preheat the oven to 400°F (200°C). Slice the tops off the whole garlic bulbs to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for 30-35 minutes or until soft.

Caramelize the Onions
In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes. Season with salt and black pepper to taste.

Combine Ingredients
Once the garlic is roasted, squeeze the softened garlic cloves into the caramelized onions. Mix well and cook for an additional 5 minutes.

Mix the Cheeses
In a mixing bowl, combine the fontina and gorgonzola cheeses. Set aside.

Assemble the Dish
Once the short ribs are done braising, remove them from the pot and place them on a serving platter. Top with the caramelized onion and roasted garlic mixture, then sprinkle the cheese blend over the top.

Melt the Cheese
You can place the assembled ribs under a broiler for 2-3 minutes to melt the cheese slightly if desired.
