Method

Prepare Salad Base

  1. 1

    Wash and Chop

Wash the mixed greens thoroughly under cold water and dry them using a salad spinner. Chop the cucumber into bite-sized pieces and slice the red onion thinly. Halve the cherry tomatoes.

  2. 2

    Combine Ingredients

In a large salad bowl, combine the mixed greens, chopped cucumber, cherry tomatoes, and sliced red onion. Toss gently to mix.

Cook Salmon

  1. 3

    Season Salmon

Preheat your grill or skillet over medium-high heat. In a small bowl, mix olive oil, lemon juice, salt, and black pepper. Brush this mixture onto both sides of the salmon fillets.

  2. 4

    Cook Salmon

Place the salmon fillets on the grill or in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let rest for a couple of minutes.

  3. 5

    Flake Salmon

Using a fork, flake the cooked salmon into large chunks.

Make Dressing

  1. 6

    Mix Dressing

In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, salt, and black pepper until well combined. Adjust seasoning to taste.

Assemble Salad

  1. 7

    Combine and Serve

Add the flaked salmon to the salad bowl with the greens and vegetables. Drizzle the dressing over the top and toss gently to combine all ingredients. Serve immediately.
