Cooking the Pasta and Pancetta

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

Cook the Pancetta
In a large skillet over medium heat, add olive oil. Once hot, add the diced pancetta (or guanciale) and cook until crispy, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat.
Making the Sauce

Prepare the Egg Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined. Set aside.

Finish the Carbonara
Slowly pour the egg and cheese mixture over the pasta while tossing continuously. Add reserved pasta water a little at a time until the sauce reaches your desired creaminess. Season with additional salt and pepper to taste.
Serving

Plate and Serve
Serve the pasta carbonara immediately, garnished with additional grated Parmesan cheese and freshly ground black pepper if desired.
