Sauté the Garlic
In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic cloves and sauté for 1-2 minutes until fragrant. Season with salt to taste. Remove from heat and set aside.
Making Roasted Tomato Pico

Roasting Tomatoes
Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet, skin side down. Drizzle with olive oil and season with salt. Roast in the oven for about 20-25 minutes or until the tomatoes are soft and caramelized.

Prepare the Pico
Once the tomatoes are roasted, chop them finely. In a bowl, combine the chopped tomatoes, diced red onion, chopped cilantro, lime juice, and season with salt to taste. Mix well and set aside.
