Calamari and Zucchini

Method

Preparation of the Ingredients

    Prepare the Zucchini

    Wash and slice the zucchini into thin rounds, about 1/4 inch thick.

    Prepare the Calamari

    If not already cleaned, clean the calamari by removing any skin and cartilage. Cut into rings if necessary.

    Make the Seasoned Flour Mixture

    In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Making the Spicy Aioli

    Combine the Aioli Ingredients

    In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, sriracha sauce, and salt. Stir until well combined. Adjust salt to taste.

Frying the Calamari and Zucchini

    Heat the Oil

    In a large pot or deep fryer, heat the oil to 350°F (175°C).

    Coat the Ingredients

    Toss the calamari rings and zucchini slices in the seasoned flour mixture until fully coated.

    Fry the Calamari and Zucchini

    Carefully add the coated calamari and zucchini to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain Excess Oil

    Remove the fried calamari and zucchini with a slotted spoon and drain on paper towels.

Serving

    Serve the flash-fried calamari and zucchini hot with the spicy aioli on the side for dipping.
