Make the Fig Compote
In a small saucepan over medium heat, combine the chopped figs, sugar, and lemon juice. Cook for about 10-15 minutes, stirring occasionally, until the figs break down and the mixture thickens. Remove from heat and let cool.
Honey Thyme Simple Syrup Preparation

Prepare Honey Thyme Simple Syrup
In a small saucepan, combine honey, water, and fresh thyme sprigs. Bring to a boil over medium heat, stirring until the honey dissolves. Reduce heat and let simmer for 5 minutes. Remove from heat and let steep until cool. Strain out thyme and store in a jar.

Mix the Cocktail
In a shaker filled with ice, combine the bourbon, elderflower liqueur, and 0.5 oz of the honey thyme simple syrup. Shake well until chilled.

Pour and Top
Strain the mixture into a chilled glass filled with ice. Top with prosecco and gently stir to combine.

Garnish the cocktail with a lemon twist and fresh thyme sprigs.
